I have baked Marble cake number of times using eggs, but this recipe is my first attempt with no eggs. The cake came out good. I served it as evening snack and the loaf stays good in an airtight container for couple of days. I bookmarked this recipe from a YouTube video, which is from a cookery show in a Malayalam TV channel and it was lying in my recipe diary for months. I didn’t have much expectations when I put this cake in the oven, as I have tried so many recipes from TV shows and not even a percent of it come out good
Ingredients
1 cup all purpose flour
7 oz. condensed milk *
1/2 cup milk (any fat)
1 tsp. baking powder
1 1/2 tsp. pure vanilla extract
1 tbsp. cocoa(unsweetened)
2 tbsps. sugar *
1/3 cup + 1 tbsp. unsalted butter( softened)
Method
1. Preheat the oven at 325 degree Fahrenheit. Line a 8 inch loaf pan with parchment paper and spray non stick baking spray and dust with flour. Sift together baking powder and all purpose flour.Beat sugar, and butter until creamy. Add vanilla ,condensed milk and beat until well combined.
2. Add milk and stir. Add the prepared dry ingredients (all-purpose flour and baking powder) and gently stir just until incorporated. Do not overbeat. Divide this mixture into two equal portions. Add cocoa to one portion and stir until well combined.
3. Add spoonful of these two batter, forming a checkerboard pattern ( Check the stepwise pictures). Once done, with a toothpick go back and forth, up and down and make swirls. Bake for about 30 minutes or just until a toothpick inserted comes out clean. ( A Tip from Martha Stewart)
4.Let the cake be in the pan for about 10 minutes and transfer it to a cooling rack , allow it to cool and then cut into slices and store in airtight container.
Notes
Sugar or Condensed Milk can increased according to your taste buds.
