I was in search for a cookie which tatses exactly like the ones we buy from the Indian bakeries.I came upon few recipes using ghee,butter...Everything was good,but definitely not like the bakery biscuits.one fine day fell upon a recipe(here)As usual tried it carefully as given in the recipe.The result was awesome.Just try these cookies for once and you will never miss Indian Bakery cookies.
2 cups All Purpose Flour
1 1/2 cups Confectioners sugar(powdered sugar)
1/2 tsp Baking Soda
a small pinch of salt
3/4 cup oil - I used Extra Light Olive Oil(Do not use Extra Virgin Olive Oil)...other preferred is Canola Oil else Vanaspathi.
1.Arrange the middle rack in the oven and Preheat the oven at degree 350 F
2.Mix All Purpose flour, baking soda,salt together very well
3.Then add sugar and mix evenly
4.Now add the oil little by little carefully and make a crumbly dough...It shud not be a fine shiny dough like chapathi dough...It shud be crumbly-You will know when you are making the dough...
5.Now make small shiny equal size balls (as you roll, the dough turns silky as in the picture)slightly flatterned at the bottom...it should look like a full moon cut into exact two ;)-for easy understanding. Do not flatten it too much.
6.Bake it for exact 10 to 11 minutes on a ungreased baking sheet.
7.For the first time sit n watch near the oven(just like me)...You will see the cookies cracking at the 9th minute or 10 th minute...The next minute you can take them out...The advantage of rolling equal sized balls is, if you see one or more cookies cracked, but not the others, the ones that are not cracked should also be baked. So, it is ready to remove from the oven. Over baking can result in hard cookies.
8.Serve the cookies after 15 minutes....
Oil can replaced with Vanaspathi or Shortening.
