Eggplant(Katharikkai)Bajji

This is another traditional recipe from Coimbatore.While discussing about this recipe with my friend Shalu,who comes from Chettinad,she had a similar recipe called Kosamalli(A traditional Chettinad recipe).The difference I could notice in that recipe is the addition of tamarind.I haven't tried kosamalli yet,but sure sometime soon ;)

Ingredients
3 indian eggplants.
1 small sized potato.
1 medium size onion finely chopped.
1 big tomato.
few curry leaves.
3 to 4 dry red chillies.
1 tsp jeera
1 1/4 tsp coriander seeds.
Red chilli powder(if needed)
Salt.
Oil.

Method
1.Pressure cook eggplants,tomato and potato with enough water.
2.Drain and reserve the stock,remove the outer skin of the potato and mash all the veggies.
3.In a kadai,add oil and once it is hot add the dry red chillies,jeera and coriander seeds.
4.Next to throw in is the onion,curry leaves,coriander leaves.Saute continuously until the onion turns soft.
5.Add the mashed veggies,salt,red chilli powder(if needed) and enough reserved stock.The consistency should be not very thick nor to be thin.
6.Serve it with hot idlies and dosas.

Note:
Do not add more potato,a small one is enough.Adding more potato will actually change the taste of this dish.
