Mango Custard

Mango custard is one my favorite in Indian restaurants during buffet at the afternoon times.Last weekend,we had some friends at home for dinner and I prepared the custard for the dessert.I tried with very few ingredients and it was awesome...Everybody enjoyed having it.And, for this recipe you need

1 lb Mango Pulp (I used canned one).
1/2 litre Boiled Milk.
Sugar(as per taste)
a pinch of ground cardamom .
3 tbsps of heavy whipping cream
2 tbsp of vanilla icecream/malai kulfi .
Chopped fruits(Honey dew,apples,pineapple,grapes)

1.Bring all the ingredients together in a big mixing bowl.Stir gently until mixed well.I had malai kulfi at home.And, yes it was so good trying with it.
2.Finally, add the fruits to it and stir once.Refrigerate and serve chilled.

Did you see,there is no custard powder used.Still,I call it mango custard.A highly recommended dessert by me.

Horse gram dhal and a hottyy gram Rasam

Last week ,it was cold and cough around me.Both, Akhilesh(Son) and Bala were taking turns.I ca n't see them sick.Whenever we use to get cold and cough,Mom always use to prepare this horsegram immediately.I don't know whether there is some medical benefit out of it,but we really feel better eating it on the first day.It was too hot for Akhilesh to have,but mangaed to feed him the rasam and dhal twice and he felt much better and my hubby too.Here,goes the recipe for the dhal and rasam.

For the Horsegram dhalIngredients
1 cup horse gram.(Kollu)
1/2 cup Big onion finely chopped.
1 medium sized tomato finely chopped.
3 garlic cloves(peeled)
1 tsp jeera
1 tsp coriander seeds.
2 green chillies.
2 dry red chillies.
few curry leaves.
few coriander leaves.

1.Wash the dhal.Cook it with plenty of water in pressure cooker for 3 whistles.
2.Drain and save both the water and the dhal,but seperately.
3.In a kadai,heat the oil and once its hot add the jeera,coriander seeds and red chillies and fry for fee secs.
4.Now, add the onion,garlic,curry leaves,coriander leaves,green chillies with turmeric powder and fry until the onions turn translucent.
5.Now, add the tomato and fry until they turn mushy.Now add he dhal and salt.Mix well.
6.Switch off the flame.Wat until it cools.
7.In a blender/Mixer grinder, grind it into a coarse paste.(For this procedure,normally a masher caller MATHU(in tamil) is used.But I developed the habit of grinding it ,which I got it from my mom).
8.Serve this dhal with hot rice,a dollop of ghee on top...YUMMY!

Now lets go to the Horse gram rasam recipe.

3 cups Horsegram extracted broth/water.
2 to 3 tbsp of cooked horsegram(My secret).
5 to 6 pearl onions thin sliced.
1 medium sized tomato finely chopped.
1 tsp mustard seed.
few curry leaves.
2 dry red chillies.
ground pepper(ADD as much as u want)
4 to 5 garlic cloves(peeled)
Ground jeera.
coriander leaves to garnish.

1.In a deep and heavy bottomed vessel,heat little oil and mustard seeds and red chillies.Once it starts spluttering,add the onions with turmeric powder and saute continuously until it turns translucent.
2.Here,you have two options : a)Either boil the tomato,removethe skin.mash it and add it to the onion or b)add the chopped tomato and saute very well until it turns mushy. b is my option,u can find better taste.
3.Add the reserved horsegram water,salt,sambhar powder,pepper,horsegram and allow it to boil on low flame for ten minutes.
4.Crush the garlic and curry leaves together.Add it to the rasam.Let it stand in the flame for few secs.Garnish with coriander leaves.
5.Serve it with hot rice.

Tips:I like to have the rasam along with a tablesppon of ground horsegram dhal.The taste is really out of this world.Try and let me know how you felt !

Red Cabbage Curry

The red cabbage curry recipe which is adapted from Mallika Badrinath's book.I made only minor changes.

1 big Onion finely chopped
1 medium size tomato finely chopped.
1 cup of chopped veggies(red cabbage,carrot,peas)
1 tsp ginger garlic paste.
Coriander leaves.
1/4 cup Thick coconut milk.
To Grind
1/4 cupShredded coconut
1 tsp poppy seeds.
few cashews.
1 tsp dalia.(pottukadalai)
5 green chillies.
3 red chillies.
1 tsp coriander seeds.

1.Cook the veggies in pressure cooker for one whistle.Drain and Reserve.You can use the water as veggie stock.
2.Add oil in a pan and fry the onions.Half the way of cooking it,add ginger garlic paste and fry until it looses its raw smell.
3.Add the tomatoes and fry until it turns mushy.
4.Add the ground masala to it and continue to stir for few minutes.
5.Now add the veggies and stir well.Add enough salt to it.
6.Few minutes before turning off the heat,add the coconut and stir once.
7.Garnish with coriander leaves.Serve it hot with rotis.

My Independence day wishes to all the Indians. Its the moment to feel proud of our country.I made this marzipan Dil Hai Hindustani Hearts for Independence day event hosted by Pooja.

I made some Marzipan today following Shilpas recipe.Thanks to you Shilpa,it came out so good.Check out here for Shilpa's recipe for Marzipan. I used the marzipan for the cake which I made today.Will post the picture soon.
I rolled the marzipan in palms,placed it above plastic sheet.Using a toothpick, carved those hearts.I loved them(my kiddoo,liked it so much...),did u?

Grilled for MM and my Mehndi Cake

How to?
Marinate cubed boneless skinless chicken, with chilli powder,salt,ginger garlic paste,vinegar,soy sauce ,orange food color,little plain flour and corn flour for atleast one hour.
Put the skewers in water half an hour before grilling.(This will avoid the skewers to get burnt)C
I added yellow squash,tomato,onion also.
Grill and serve it hot.Squeeze some fresh lemon juice just before serving.

And,How is this cake?One of Bala's colleagues is getting married soon.They had a bridal shower party for her today and I made this cake .I remembered my cake instructor saying that I could make cakes with mehndi designs.So,google helped me out to find few.Got the essence,applied my thoughts and I liked this cake very much.My idea initially was to make cake with baby pink and light voilet.But it turned out much darker,but its my cute little cake though.Could you see I have rolled out marzipan for the toppers?I luved doing it.

Shrimp Biriyani

Last week one day,I shared my Shrimp Biriyani recipe with one of my friend named Viganiya and from that day I got tempted to eat it.And at last I prepared it for our dinner today.Normally,we have an unwritten rule,not to eat rice for dinner,but today we had a birthday party in the afternoon and it was Pizza party.And, there is another unwritten rule,not to leave a day without eating rice.So,Shrimp Biriyani was my only choice for dinner.
And people,I forgot you all to tell one thing,that my husband doesn't eat Shrimps.I told him that I"ll make rice and rasam for him seperately.But,I got busy with some other stuff along with this biriyani.So,it was already 9 p.m and hunger bell started ringing in Bala's tummy.He tasted a bit of rice and said, "You were also working for a long time,How long you'll be there standing in the kitchen.Its ok,I'll have rice alone and you have the shrimp ".And, I was really relieved that I need not cook more and actually I was also tired and it was a big "Fine" from me.And you all know what?He is really a gentleman,who kept his word giving me only the shrimp and the rice?,Oh man, I broke one of my rules.I didn't have rice to taste :(.He digged the rice and one by one all the shrimps came to my plate,And,atlast he said,"You didn't prepare anything for me,thats why I had to eat this rice"."Yes,but not this much" was my answer.I was correct right?Wanna know the recipe?Here,it is

To Marinate
1/2 lb peeled and deveined shrimp.
1 tbsp ginger garlic paste.
2 tsp red chilli powder.
1 tsp ground black pepper.
1 tsp White Vinegar.
For the Rice
1 1/4 cup Basmathi rice.
3 1/2 cups of Water.
1 tsp Jeera.
1 green cardamom.
1 clove.
a very small piece of cinammon.
To Grind
1 small sized red onion finely chopped
2 green Cardamom
2 cloves
a piece of cinammon.
4 green chillies.
For the carmelisation
1/4 cup thin sliced onions
2 tsp Oil.
Rest of the ingredients
1 Medium sized red onions finely chopped.
2 bay leaves.
1 tsp garam masala.
3 tbsp yogurt.
few mint sprigs.

1.Soak rice in water for 10 minutes.Drain and Reserve.
2.Cook the rice in microwave for 20 minutes with the ingredients given.Add only half of the salt needed,as you have salt in the marinade also.
3.Grind the ingredients asked to grind into paste without water.
4.Heat oil in a pan and saute the paste very well until it starts leaving the pan.(This step takes some time,but that does the magic in taste).take it out and reserve.
5.In the same pan,add some oil and add the bay leaves.Add the onion and saute continuously,until it turns translucent.Add the mint, garam masala,red chilli powder,(if you think the marinated shrimp doesnt have chilli powder) and the marinated shrimp and saute until the shrimp gets 3/4 cooked.Now,whip the yogurt and add it to the shrimp masala and cook until the shrimp gets cooked.
6.Mix the rice along with the masala little by little.
7.In another pan,heat oil in another pan,and saute the onions until they turn crispy and golden brown.Add these onions the the rice mixture.
8.Garnish with coriander leaves.Serve it hot with onion raitha.
