Chinese Fried Rice

I think there is no need to repeat the background behind this recipe as you can find one in Veg manchurian recipe.
Ingredients
1 cup Basmathi Rice.
1 cup mixed vegetables(diced carrots,green peas,finely chopped french beans,diced capsicum,finely chopped cabbage).
1/4 cup chopped green onions.
1 tbsp ginger garlic paste.
2 tbsp white vinegar.
4 Eggs(optional).
1 tbsp oil(preferablyEVOO).
Method
1.Heat pan and add oil to it.Once the oil is hot,add the onions till it becomes translucent.
2.Add ginger garlic paste and saute till the raw smell goes away.
3.Now add the vegetables to it and saute along with black pepper and half of the salt required.Cook till the vegetables are half cooked.
4.Remove this vegetable from fire and keep it aside.
5.In a seperate pan,break and saute the eggs well with little bit of salt.(This step is optional).
6.In the microwave ,Cook the rice with 2 cups of water and the remaining salt for 14 minutes at microwave high.
7.After the setup time,stir the vegetables to the half cooked rice and cook for 4 to 5 minutes.
8.Once its cooked,add the scrambled egg pieces to it and mix well.(This step is also optional).
9.Garnish with green onions.
There are different ways of making fried rice.There are different ways of using vegetables to the fried rice and even the way of its cutting also.You can experiment :) with various sauces even.Let me try to post the next form of Fried Rice soon.

Vegetable Manchurian



Ingredients
1 Big red Onion finely chopped
4 tbsp Tomato ketchup(I prefer Delmonte or Hunt's)
1 tbsp Tomato chilli sauce
1 tbsp Soy sauce
1 tsp Ginger Garlic paste
Salt
For the veggie balls:
1 cup finely chopped cabbage,french bean and carrot.
3 tbsp All purpose flour.
1 tsp chilli powder.
1 tsp Corn flour.
1 tsp Ginger garlic paste.
1 tbsp salt.
1 tsp water.
Method
1.Mix all the ingredients needed for veggie balls into a thick mixture and make balls of equal sizes.
2.In the hot oil at medium heat,deep fry the balls until it becomes golden brown in color.
3.In a separate pan,saute the onions till it becomes translucent.Add the ginger garlic paste and saute,till the raw smells goes away.
4.Now,add the veggie balls,tomato ketchup,tomato chilli sauce,soy sauce and stir for 2 more minutes.
5.Garnish with coriander leaves.Serve it as a side for Fried Rice or for Chinese Fried Noodles.

Paneer Pakora




Ingredients
1 cup cubed Panner (Cottage Cheese)- Homemade/store bought
1 cup Besan flour (Gram flour)
2 tbsp Chilli powder
1 tsp Baking powder

a dash of asafoetida.
a big pinch of powdered ajawain.
1/2 tsp turmeric powder
Oil for deep fat frying
Salt(as per taste)
Water

Method
1.Sieve besan, salt and baking powder together.
2.Add chilli powder and turmeric powder,ajwain,asafoetida to this mixture.
3.Add water little by little to this besan to make a paste (this shouldn't be very thick or watery).
4.Heat oil in a kadai at medium.
5.Dip the Panner cubes in the besan batter and deep fry in the oil till its cooked.
6.Serve it hot with ketchup or with Tomchi(Mix Tomato ketchup and chilli garlic sauce in 2:1 ratio.Add finely chopped onion to this and serve as a dip for hot snacks).

Deep Fried Lima Beans


Yesterday,when I opened the freezer to get something,I just noticed the lima beans which was lying there for months.First,thought of making gravy and dropped the plan as I will not require all the lima beans for the gravy preparation.Then struck with an idea of preparing this snack and quickly soaked the lima in water.I just confirmed the preparation method with my mom who came for chat later.This lima bean fry,you can't find everywhere and only few people know about it(same like the kus kus halwa) and is costly in stores where it is sold.This can be stored in a airtight container for an year.Field Beans can also be subsituted and super crispy snack for the kids. :)

Ingredients
Lima beans-Frozen/Fresh(Can't find fresh one here)
Red Chilli powder
Salt
Hing/Asafoetida
Oil for deep fat frying

Method
1.Soak the lima beans in water for half an hour.
2.Remove the skin of the lima bean,by pressing at the corner of the bean will help ou to remove the skin.
3.Spread the deskinned bean in a cloth and allow it dry overnight.
4.Heat the kadai,add oil neede for deep frying.Once the oil gets heated add the lima beans and fry until it becomes crispy.
5.Remove the oil from the beans by wiping it out in a paper towel.
6.In a air tight container,add salt,chilli powder,hing and the fried lima beans and shake well,so that the beans observes them all.Enjoy eating anytime.

Tomato Pulao(in Microwave)


Cooking dinner on Friday evening is always boring and tiring. I had no dosa batter at home, last friday which used to be handy. I just thought of making this pulao in Microwave(easy...easy...easy).I keep cut onions in the refrigerator most of the time,which reduces the preparation time a lot.All I had to do is cut the tomato.May God bless me with more easy cooking ideas like this.


Ingredients
1 cup Basmati Rice (washed and soaked in water for 10 minutes)
1/2 cup Finely chopped Red Onion
1 cup finely chopped Tomato
2 tbsp Red Chilli Powder
1 tsp Ginger Garlic Paste
1 inch Cinnamon
3 Green Cardamom
2 cloves
1 Bay leaf
5 to 6 Mint leaves (optional)
2 tbsp OilSalt (as per taste)
2 to 2 1/2 cups water
Coriander leaves(to garnish)

Method
1.In a large microwaveable bowl add the onion and oil. Keep it in the microwave uncovered at high for 3 mins.
2.Add the bay leaf,cinnamon, cardamom, cloves, ginger garlic paste, mint leaves, and cook for 90 secs.
3.Add the tomato, chilli powder, half of the salt needed to this mixture and cook for 3 more mins. 4.Drain the water from the rice.Add the rice to the tomato mixture.Give a good mix so that the tomato gravy applies to the rice.Add the remaining salt also.
5.Add the water.
6.Cook for 20 mins at microwave high.(I don't cook rice covered in microwave-it has always worked out for me).
7.Check the rice after 15 minutes,it has started cooking and give a stir as the gravy part would be at the top by this time.
8.After 20 minutes of cooking,again take the rice give a stir(to check whether the water is still there at the bottom layer of the rice),if you feel it has to get cooked a bit cook again for 2 to 3 minutes(but for this measurement it will not take more than 20 minutes).
9.Garnish with coriander leaves and serve the pulao hot with raitha.
