I think there is no need to repeat the background behind this recipe as you can find one in Veg manchurian recipe.
Ingredients
1 cup Basmathi Rice.
1 cup mixed vegetables(diced carrots,green peas,finely chopped french beans,diced capsicum,finely chopped cabbage).
1/4 cup chopped green onions.
1 tbsp ginger garlic paste.
2 tbsp white vinegar.
4 Eggs(optional).
1 tbsp oil(preferablyEVOO).
Method
1.Heat pan and add oil to it.Once the oil is hot,add the onions till it becomes translucent.
2.Add ginger garlic paste and saute till the raw smell goes away.
3.Now add the vegetables to it and saute along with black pepper and half of the salt required.Cook till the vegetables are half cooked.
4.Remove this vegetable from fire and keep it aside.
5.In a seperate pan,break and saute the eggs well with little bit of salt.(This step is optional).
6.In the microwave ,Cook the rice with 2 cups of water and the remaining salt for 14 minutes at microwave high.
7.After the setup time,stir the vegetables to the half cooked rice and cook for 4 to 5 minutes.
8.Once its cooked,add the scrambled egg pieces to it and mix well.(This step is also optional).
9.Garnish with green onions.
There are different ways of making fried rice.There are different ways of using vegetables to the fried rice and even the way of its cutting also.You can experiment :) with various sauces even.Let me try to post the next form of Fried Rice soon.
